Eurotium cristatu

Eurotium cristatum (commonly known as “golden flowers”) is a unique probiotic fungus found exclusively in Fuzhuan brick tea. It is produced through fermentation under specific temperature and humidity conditions. This fungus secretes enzymes that catalyze the conversion of starch in tea leaves into monosaccharides, which enhances the tea’s mellow mouthfeel and fungal‑floral aroma. It also produces beneficial compounds such as Fuzhuanine (bioactive polyphenols), which offer health benefits including antioxidant effects and regulation of gut microbiota. Studies have shown that its metabolites can improve glycolipid metabolism and promote the proliferation of beneficial intestinal bacteria. However, it is important to note that a higher quantity of “golden flowers” does not necessarily mean better quality – uniform distribution is the key indicator of excellence. The genome of this strain has been sequenced, and it is currently the only tea‑derived fungal strain classified as a National Level‑2 Technological Secret in China.
